Observed employee drinks stored on prep table alongside food items. Store all employee items only in designated areas and maintain by the next routine inspection.

Beef jerky is made on-site without a variance from KCHD. - (Correct By: Oct 10, 2022)
38 C 6-202.13: (A) Insect control devices that are used to electrocute or stun flying insects shall be designed to retain the insect within the device. (B) Insect control devices shall be installed so that: (1) The devices are not located over a FOOD preparation area; and (2) Dead insects and insect fragments are prevented from being impelled onto or falling on exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE­ SERVICE and SINGLE-USE ARTICLES.
Electric fly trap is installed above the 3-compartment sink in the butcher area. Install where falling insects cannot fall onto food or clean food or equipment and maintain by the next routine inspection.
47 C 4-202.16: NonFOOD-CONTACT SURFACES shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.
Paint is chipping off the shelves in the walk-in cooler. Paint or replace and maintain by the next routine inspection.
49 C 4-602.13: NonFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
The following non-food contact surfaces are in need of cleaning: 1)Inside the fryer cabinets, 2)Shelves inside the walk-in cooler. Clean and maintain by the next routine inspection.
53 C 6-202.14: Except where a toilet room is located outside a FOOD ESTABLISHMENT and does not open directly into the FOOD ESTABLISHMENT such as a toilet room that is provided by the management of a shopping mall, a toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door.
The bathroom door is not self-closing. Repair and maintain by the next routine inspection.
55 C 6-501.12: (A)PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean.(B)Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of FOOD is exposed such as after closing.

55 C 6-501.11: PHYSICAL FACILITIES shall be maintained in good repair.
The ceiling of the walk-in cooler is rusty and has peeling paint. Repair and maintain by the next routine inspection. Repeat
55 C 6-201.15: Mats and duckboards shall be designed to be removable and EASILY CLEANABLE.
Cardboard boxes are used as floor mats below the equipment in the kitchen and are dirty with grease and debris. Do not use cardboard as a floor mat and maintain by the next routine inspection. Repeat
55 C 6-501.114: The PREMISES shall be free of: (A) Items that are unnecessary to the operation or maintenance of the establishment such as EQUIPMENT that is nonfunctional or no longer used; and (B) Litter.

56 C 6-501.14: (A) Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials. (B) If vented to the outside, ventilation systems may not create a public health HAZARD or nuisance or unLAWful discharge.
The exhaust hoods in both the kitchen and back room are in need of cleaning. Clean and maintain by the next routine inspection.
